2 bags Cascade frozen shredded hash browns
2 cups sour cream (recommend Wallaby’s brand)
1 package neufchatel or cream cheese, softened
1 lb Wags natural breakfast sausage, cooked
1/2 cup chopped green onions
1 1/2 cups shredded cheese, any variety works, I like a combination of cheddar and pepper jack
Salt and pepper to taste
Bread crumbs or cornflakes for the top
Preheat oven to 350. Mix all ingredients in a bowl until uniform. Spread in a large, well greased casserole dish and cover with foil. Bake for 20 to 30 minutes (until hashbrowns are cooked and cheese is melted) take off foil and add topping. Bake for another 10-15 minutes. Can easily be made vegetarian/vegan by using dairy and meat substitutes!
